Papaya and banana salad

Papaya and banana salad

Preparation

  • Prepare the papayas by cutting them in half lengthwise. Remove all of the black seeds, scoop out the flesh and dice.
  • Place in a mixing bowl with the sugar.
  • Scrub the lime. Finely grate the zest and squeeze out the juice. Add them to the mixing bowl.
  • Cut the vanilla pod into 2 cm chunks. Add them to the mixing bowl.
  • Mix well and cover with cling film.
  • Leave to cool in the refrigerator for one hour.
  • After one hour, peel the bananas, removing any strands.
  • Cut into thick slices and drizzle with lemon juice to prevent from browning.
  • Add them to the mixing bowl without adding the rest of the lemon juice.
  • Mix well and serve immediately.
