Pistachio madeleines

Ingredients
For 12 madeleines
- 2 eggs
- 70 g (2½ oz) slightly salted butter
- 80 g (3 oz) caster sugar
- 110 g (3¾ oz) flour
- 30 g (1 oz) of chopped pistachios
- 1/2 packet of baking powder
- butter for baking tins
Preparation
- Preheat oven to 210° C (mark 7).
- Beat the eggs in a bowl with the caster sugar.
- Melt the butter and pour over the mixture.
- Sieve the flour and baking powder and add to the bowl with the chopped pistachios.
- Mix again.
- Butter the madeleine tins and fill with the mixture.
- Place in the oven for 8 to 10 minutes.
- Leave to cool before serving.
Top tip! Separate the egg whites and yolks and add the whisked egg whites to the mixture before cooking for guaranteed fluffiness!
