Pistachio madeleines

Ingredients
For 12 madeleines
  • 2 eggs
  • 70 g (2½ oz) slightly salted butter
  • 80 g (3 oz) caster sugar
  • 110 g (3¾ oz) flour
  • 30 g (1 oz) of chopped pistachios
  • 1/2 packet of baking powder
  • butter for baking tins
Preparation

 

  • Preheat oven to 210° C (mark 7).
  • Beat the eggs in a bowl with the caster sugar.
  • Melt the butter and pour over the mixture.
  • Sieve the flour and baking powder and add to the bowl with the chopped pistachios.
  • Mix again.
  • Butter the madeleine tins and fill with the mixture.
  • Place in the oven for 8 to 10 minutes.
  • Leave to cool before serving.

 

Top tip! Separate the egg whites and yolks and add the whisked egg whites to the mixture before cooking for guaranteed fluffiness!
