Sugar cane consists of 70% water and 30% dry matter. The 30% dry matter is broken down into :- 13 % fibres (cellulose, hémicellulose, pectins and lignin) - 14 % sugar (sucrose)- 3 % non-sugar (mainly glucose and fructose).
