Tips 
  • For successful light or dark caramel, white lump sugar is by far the best choice as it soaks up fluid very easily. 
  • To give a dessert a subtle citrus flavour, add sugar lumps rubbed with lemon or orange zest. 
  • If tomato sauce is too sharp, vinegar too strong or gravy too salty, carefully add a sugar lump or two to restore the right balance.

Cube sugar

Brown or white lump and cube sugar is obtained by moulding and compressing moistened granulated sugar.

Use it for

 Sweetening everyday hot drinks. As caster sugar is to milk drinks, so lump sugar is to tea, coffee and herb teas, adding just the right note of sweetness, especially if you choose brown sugar.
